Based on the Coco Munch recipe I figured out how to make chocolate covered strawberries that meet our requirements of no white sugar, soy, dairy, or rice. Yay!
1Tablespoon coconut oil
2 Tablespoons cocoa powder
For one container of strawberries from the store I double the recipe.
We use organic virgin coconut oil, raw organic grade B honey, organic cocoa powder and organic strawberries.
Heat the coconut oil on the stove (in a pan if course ;). Add the honey and stir. Then add the cocoa powder and stir.
Wash the strawberries and, leaving the green tops on, dip them in the chocolate mixture. Place then on a plate you can freeze. I use a small baking sheet that fits flat in my freezer. I also put parchment paper on first so the strawberries don't stick.
Spoon or pour the remaining chocolate mixture on top. If it pools on the bottom, all the better for scooping up later with your fingers!
Put in the freezer for 10-15 minutes. Eat!
If you are not going to eat them right away then don't keep them in the freezer, unless you want to gnaw on totally frozen strawberries. :)
The first time I made this I thought I was using a 2 Tablespoon measuring spoon. I later realized it was the 2 teaspoon one. The mixture ends up runnier and the finished product less beautiful, but there is less of a strong dark chocolate taste, which I prefer. Try it both ways and decide for yourself. :)
