I feel free!
My friend sent me the funny gluten-free video below and we threw back our heads and laughed. Both of us were gluten-free for months before we went Paleo and we each agree:
Life is easier when you're Paleo.
I don't know about you, but when I went gluten-free I was trying to replicate the Standard American Diet, only without the gluten. But gluten is a huge part of the Standard American Diet. Toast or cereal or pancakes for breakfast. Sandwiches for lunch. Pasta for dinner. Pies, cakes, cookies or brownies for dessert. And, of course, pizza for a midnight snack, cold from the fridge. Or anytime, really. Pizza is flexible.
But let's face it, no matter how much time or money you spend, gluten-free products just don't taste the same. And believe me, I spent a lot of money. Just ask my husband. ("How much are we spending on groceries?!") Pre-packaged gluten-free donuts and brownies and breads, oh my!
I got out the bread machine.
I got out the baking supplies.
I bought sugar by the truckload, because gluten-free is not sugar-free, and something needs to make amends for that missing flaky texture and it's definitely not vegetables.
But then I went Paleo and it all went away.
No more package reading with 20 ingredients I can't pronounce. No more gluten-free bread taste tests. ("Well, this one tastes a little less like cardboard if you toast it.") And better yet, no more running out of gluten-free sweets and then pacing the kitchen at 10:00pm like a wild, caged tiger. On Paleo I have no food cravings.
And, best of all, no more standing in the aisle of the baking section at Whole Foods flummoxed like the lovely couple I ran into today. I was picking up some coconut flour when they struck up a conversation.
Them: What do you do with that coconut flour?
Me: Well, I'm going to make some pie crust with this.
Them: Oh, because we went to a baking class and they taught us how to make gluten-free flour but we forgot the instructions and there were so many ingredients.
Me: Yes, well, you can use the Pamela's mix..... or you can make it yourself but yes, it's got a lot of parts to it. I just went Paleo and I don't eat grains at all now.
And then we had a lovely conversation about how it's so much easier to go Paleo than to stand there in the baking aisle trying to figure out how to make all of those gluten products without the gluten. Not in the least because Paleo food all tastes great because it's not gluten-free, it's just.... free.
And so are you, without the food cravings anymore. :)
