Paleo and non-Paleo people alike loved these mashed yams! My 8 yo asks for them all the time. (8 and 3/4 she says.) They're not something you want to eat every day if you are watching your weight, but once in a while, or after workouts, or all the time if you are an active kid they are excellent!
This is one of my go-to dishes for when we have company and it always disappears. Even the neighbor kids gobble them up when they visit. Yum!
This is one of the recipes I don't really measure out. I use 4-6 yams depending on their size and how hungry we all are. I do measure out the cinnamon because too much is too much but I don't measure the coconut butter - I just get a big spoon from the drawer and spoon some coconut butter out twice. It's never the same and no one complains. :)
I like the easy Paleo stuff.
