Paleo people love bacon.
If you are eating it, go for natural bacon that does not have any nitrates in it. For example, Trader Joe's bacon is nitrate-free. They have it in pre-cooked and uncooked versions. Applegate has an organic non-nitrate bacon.

The Paleo diet says "no sugar" but sugar is an ingredient in your bacon. I know because I have yet to find one that does not. It negligible however, since each slice has 0 grams of sugar in it. As a result bacon is "Paleo Approved".
How To Cook Bacon
Don't laugh. When I went Paleo I didn't know how to cook. Even though I was a mom with two kids. For a year I cooked bacon in a skillet. Then I learned you could cook it in the oven. Seriously!? What a time-saver!
Cooking Bacon On The Stove
Do not be afraid of the bacon. I cook mine on "4" and I use a stainless steel skillet. The key is to not let it stick. Turn it over after a few minutes. Turn it over again. Keep turning it ever once in a while until it's the darkness you like.
