Just made this Paleo crock pot dish. It was awesome! I used chicken thighs and a yellow onion and left the skin on the sweet potatoes. I did not have celery so I just used four carrots. I thought it would be "eh" because there are so few ingredients but I was wrong...my husband and I devoured it. And it was so easy to make. Score!
Try making without the chicken and puree it in the blender for creamy sweet potato soup.
I like the easy Paleo stuff.
